BAJI BARI


In Korean folklore, Queen Baji Bari was the supreme queen of the Earth. She is the wife of Cheonjiwang, who is the supreme ruler of the world, and together they literally keep the world turning. Could my sweet, layered, fruity daiquiri appeal to your tongue like Cheonjiwang’s kisses to his beautiful queen? You can be the judge, because I’m already smitten with this one. Crushin’ hard.


In this lovely lady’s build, I have included some classic fresh squeezed lime, Blackberry Vanilla Lychee Syrup that I prepared yesterday, fresh Lychee juice, and Bitterman’s TIKI bitters. The syrup turned out quite lovely, with a deep deep purple tint, and delicate berry, tart lychee flavor; this, paired with the herbal, spicy aroma of the TIKI bitters and the acidity of the lime, created a tropical balance that also brought out the sweet apple pear hint in one of my favorite rums to work with - Mount Gay Eclipse.


Mount Gay rum is the oldest existing brand of rum in the world. It’s distillery holds the oldest deed in the land, dating all the back to 1703. In Barbados, there are other rums made on the island, but they are made in very small batches, and many are never seen outside of the country. The Eclipse variation specifically has a very distinct spicy attribute to it, and I get faint aromas and taste of tart, sweet apple. Also, random fact - the first drink James Bond orders in Casino Royale is not his trademark vodka martini, but a Mount Gay Rum with soda.


So naturally, this depth in rum flavor give this daiquiri the perfect backbone to support all the tart and sweet fruity notes from all the other additions. If you are wondering what the garnishes are, I am playing around with making dried fruit crisps from various topical fruits…I’ve baked Asian pear slices, dragonfruit slices, and banana slices to make fruit crisps. To make a fruit crisp, you just slice the fruit into very thin 1/8 inch thick slices, lay flat on a foiled tray, brush fruit with lemon-water (50/50 ratio), bake at 250 degrees for 2 hours, flipping them after 60 minutes.


I give you the queen, she’s pink, pretty, and full of Korean fruitastic flavors…


ELEMENTS:


2 ounces MOUNT GAY ECLIPSE Rum


1/2 ounce fresh squeezed lime


3/4 ounce fresh lychee juice


1/4 ounce turbinado sugar syrup


1/2 ounce Blackberry vanilla lychee syrup


1 slight dash tiki bitters, and a dash on the lime garnish


BUILD:


combine all ingredients in shaker tin, shake vigorously with ice, double strain into stem daiquiri glass, garnish with dragon fruit crisp and lime wheel, doused in tiki bitters.
